Recipe: Pecan Praline Chicken

Summary: Dijon glaze topped with a Pecan Praline Crust over Chicken. This savory yet lightly sweet pecan praline chicken is delicious with sweet potato orange cups and balsamic brussel  sprouts.

Ingredients

  • 3 to 4 - 4 oz chicken breast
  • 1 1/2 tablespoons Dijon mustard
  • 1/2 tablespoon lemon juice
  • 1/8 teaspoon ground cumin
  • 1/4 cup chopped pecans
  • 1/4 cup panko Japanese bread crumbs
  • 2 tablespoons packed brown sugar
  • 1 tablespoon melted butter

Instructions

  1. Spray baking pan with cooking spray.
  2. Place chicken breasts in pan.
  3. Mix together Dijon mustard, lemon juice and ground cumin.
  4. Now combine pecans, bread crumbs and brown sugar.
  5. Mix well, then add and mix butter into pecan mixture.
  6. Top Chicken with pecan topping, making sure topping is all on top of chicken.
  7. Bake Chicken at 350F for 30 - 35 minutes until internal temperature of chicken reaches 165F.
