<p>I used to equate healthy with taking lots of time and costing more. It still may not be as easy as just tearing something open but it can be pretty quick. This morning I made fruit and yogurt parfaits. They were YUM and filling. I simply started out thawing some frozen blueberries  I picked myself.  I put 1/2 cup of Stonyfield non-fat plain yogurt (chobani and fage are also really good)  in our bowl. I blended in a few drops of my <a title="homemade lemoncello" href="http://culinaryclique.com/traditional-easter-brunch-and-meal-or-not/" target="_blank">homemade lemoncello</a> just to cut a little of the yogurt tang or a drizzle of honey is natural and healthy. I then added fresh peaches, banana, coconut and the blueberries over the yogurt. I sprinkled 1/3 cup of Cascadian Farms cinnamon raisin granola cereal on top and WHA LA! It was cool and filling, not to mention healthy and low fat. I bought some breakfast bread from Publix along with coffee.  Enjoy the simple healthy, quick, parfait that couldn&#8217;t be topped by gourmet restaurants in town.</p>

I discovered this hidden treasure close to where I live. It is a &#8220;pick your own&#8221; blueberry farm. You may think that &#8220;pick your own&#8221; doesn&#8217;t sound like a treasure but I really enjoy the experience of it. Mary Mac Berry Farm doesn&#8217;t spray their bushes so you can eat while you pick. Part of the treasure is the blueberries cost $1.50 per pound, yes per pound.</p>
<div id="_mcePaste">Once you bring home your berries and get your fill of fresh blueberries, just put them in a freezer bag, without washing, and freeze. Then you can grab what you need when you need them. I immediately made <strong><em><a title="Blueberry Turnovers" href="http://jtrigsby.com/recipes/details.php?rid=28" target="_blank">blueberry turnovers</a></em></strong> and blueberry pancake syrup. This leads me to sharing some of these recipes with you. Fortunately, it doesn&#8217;t just stop there. Enjoying fresh blueberries is healthy and can be added in simple everyday foods such as cereal or in a yogert parfait. Another refereshng summer treat is making a berry banana smoothie. However, my family&#8217;s favorite is French toast with fresh blueberries swimming in warm maple syrup.</div>

<p>Combine whipping cream and powdered sugar with electric mixer on high until fluffy.     *Sugar Free Option: Sugar Free Whip Topping</p>

<li>Bake crescents as directed.</li>
<li>Cut crescents length-wise</li>
<li>Mix egg substitute and half &amp; half.</li>
<li> Sprinkle with cinnamon (re-sprinkle as needed).</li>
<li>Warm skillet to medium heat or 300F electric skillet.</li>
<li>Spray skillet.</li>
<li>Dip crescents in egg mix and lay flat side down.</li>
<li>Check crescent and flip cooking both sides to a golden brown.</li>
<li>Warm syrups separately in microwave.</li>
<li>Top French Toast with fruit</li>
<li>Pour sugar free syrup over French Toast first and pure maple over the sugar free.</li>

<p class="summary"><strong>Summary: </strong>We love these buttermilk pancakes. They can be lowfat and your family will never know it. Diebetic in the family or just cutting back on sugar? Just use SPLENDA sugar blend without compromising taste or texture. We pick fresh blueberries in the summer and have blueberry buttermilk pancakes. In the fall, OH YES, it is pecan buttermilk pancakes with maple link sausage all the way. Don&#8217;t stop there&#8230;top these pancakes with strawberries romanoff and spiked cream for a gourmet breakfast. My son-in-law is not a breakfast eater so sprinkle with mini-chocolate chips and turn breakfast into dessert. There is no limit to the start of a great pancake. Don&#8217;t forget to serve these with warm syrup. If you are looking to cut back on more sugar, I use half warm pure maple syrup and **half Cary&#8217;s Sugar Free Syrup.</p>

<li class="ingredient">1 cup all-purpose flour</li>
<li class="ingredient">1-2 tablespoons sugar (**or 1 teaspoon splenda sugar blend)</li>
<li class="ingredient">1 teaspoon baking powder</li>
<li class="ingredient">1/2 teaspoon baking soda</li>
<li class="ingredient">1 cup *low fat buttermilk</li>
<li class="ingredient">1 tablespoon canola oil</li>
<li class="ingredient">1 egg, lightly beaten (*or 1/4 cup liquid eggs)</li>
</ul>

<li>Spoon flour in measuring cup and level the top using a knife to scrape off excess.</li>
<li>Add sugar, baking powder and baking soda.</li>
<li>Mix dry flour mixture well to combine ingredients.</li>
<li>Add remaining ingredients.</li>
<li>Mix well with a whisk or with blender on low speed.</li>
<li>Batter will be thick but add a little buttermilk to make it the consistency your family likes. The thicker the batter the more dense and cake-like the pancake will be. I usually add a couple of tablespoons of buttermilk and still have to spread the batter out so the pancake won&#8217;t be so thick.</li>

<li>First bring electric skillet to 300F.  Then spray generously with cooking spray.</li>
<li>Spoon 1/4 cup batter for each pancake. Batter will be thick and will need to be spread out.<br />
