Traditional Easter Brunch and Meal, Or Not
I love family traditions. That includes getting together for family meals and events like the one coming up this week, Easter. Probably like most families, we eat certain things for some family traditions. This Easter Meal we are Breaking Out of the Proverbial Egg and trying something different. We will still have ham and the fixings but we are going to try new recipes.
Usually there is a family planner person for get togethers and I am that person for our family. What that means is that I have learned that I don’t have to make everything myself. Now there can be an upside to taking on this sometimes daunting task. You can pick recipes and ask family members to make them. For example, my mother-in-law usually makes a coconut cake so I am passing on a Yummy Coconut Cake Recipe for her to make this year.
So whether you do an Easter Brunch or Easter Meal, here are some menu ideas and recipes. Happy Easter Gathering!

Amazing Meatloaf
Meatloaf is usually just meatloaf. Most of the time I would always hear friends and family say their meatloaf was too tough, dry and chewy. My reply would always be, “You’re cooking it to long.” I think common mistakes when it comes to meatloaf are cooking it to long, letting it dry out by not covering it while it cooks and then just squirting ketchup on top. YUCK!

It is made in the crock pot or slow cooker so it is juicy, tender and clean up is so much easier. And yes, meatloaf sandwiches the next day are the bomb. Let me know what you think.

Summary: My sister and I ate lunch at a Tea Room in town and ordered a dessert that was delicious. I decided to come up with my own version and share it with my family. It was a hit!
